CHEESY PASTA SOUTH INDIAN STYLE

Yep i know its been a loong tym..ive been held up sorry!!.This recipe is an indian take on pasta.I dont remember how many times i ever did this.And to tell the truth i was even allowed to take some good pics because it disappeared the second i turned my eyes away from it!!Go on..from now on no small or medium sized servings..Eat to your appetite!!
THINGS YOU NEED

  • PASTA-200GM(ANY PASTA I USED BAMBINO)
  • ONION-1 FINELY CHOPPED
  • TOMATO-2 FINELY CHOPPED
  • GARLIC -4 CLOVES FINELY CHOPPED
  • RED CHILLI POWDER-1TSP
  • TURMERIC POWDER-1/4 TSP
  • SALT -AS REQUIRED
  • TOMATO SAUCE-2 TSP
  • MINT-A BUNCH FULL
  • MOZZARELLA CHEESE-100 GM
  • CHEDDAR CHEESE-100GM
  • OREGANO-1/4 TSP
  • CAPSICUM-HALF FINELY CHOPPED
  • SUGAR-HALF TSP.
METHOD

  • BOIL 1 LITRE OF WATER WITH 1 TSP OIL.ADD PASTA AND LET IT COOK FOR 10 MINS(SHOULD BE COOKED ONLY TO 3/4.SHOULD RETAIN ITS CRUNCHINESS)
  • PRESERVE 1 CUP OF PASTA BOILED WATER.
  • NOW DRAIN IT AND TOSS IT WITH 1 TSP OIL AND KEEP ASIDE.
  • NOW HEAT A WIDE BOTTOMED PAN.ADD 2 TSP OF OIL.
  • ADD GARLIC AND FRY TILL GOLDEN BROWN.
  • ADD ONION AND FRY TILL THEY BECOME TRANSPARENT.
  • ADD TOMATO,SALT,RED CHILLI POWDER,TURMERIC,TOMATO SAUCE,OREGANO,MINT,SUGAR.
  • FRY WITH A LITTLE AMOUNT OF PASTA BOILED WATER FOR 7 MINS.
  • NOW ADD THE REMAINING OF PASTA FILLED WATER AND KEEP THE FLAME TO MEDIUM.CLOSE THE PAN WITH LID.LET THIS MIXTURE COOK FOR 10 MINS STIRRING IN BETWEEN.
  • THE CONSISTENCY OF THIS SHOULD BE SEMI-SOLID .SHOULD NOT BECOME DRY.
  • NOW ADD PASTA STIR WELL.
  • AGAIN CLOSE THE LID AND COOK FOR 5 MINS IN MEDIUM LID.
  • NOW IN A SEPARATE BOWL MIX TOGETHER BOTH THE CHEESES.
  • ADD HALF OF THIS TO THE PASTA AND MIX WELL.
  • ADD THE REMAINING HALF ON THE TOP OF PASTA.
  • CLOSE THE LID AND KEEP ON A LOW FLAME FOR 2 MINS OR TILL THE CHEESE MELTS.
  • SERVE HOT IMMEDIATELY.
