SPICY EGG MASALA WITH BABY POTATOES

This is my first post on eggs. I should thank sailu's kitchen for this recipe. I modified this recipe a bit by adding baby potatoes and it really came out well. Tastes really good with plain rice, rasam,chappati etc..

THINGS U NEED

  • Eggs - 4, hard boil, peel and make small slits lengthwise
  • Onion - 2, large, sliced
  • Green chilies - 2, slit
  • Ginger garlic paste - 1 tsp
  • Tomato - 2, large, chopped
  • Red chili powder - 1/2 to 3/4 tsp
  • Black pepper power - 1/2 tsp
  • Coriander powder - 1 tsp
  • Garam masala powder - pinch
  • Curry leaves - 1 sprig
  • Salt to taste
  • Oil - 2-3 tbsps
  • Baby potatoes-5 nos halved


METHOD

  • Heat oil in a heavy pan, add onion ,ginger garlic paste & green chilli. Saute on a medium flame till golden brown for 10 mins.Add baby potatoes
  • Add curry leaves,red chilli powder,pepper powder,coriander powder ,garam masala powder salt and mix well.
  • Add tomatoes and fry for 5 mins.
  • Add 1/4 cup water and cook closed with a lit for 7 mins.
  • Add eggs and cook on a medium flame without lid for 5 mins till the eggs change colour and potatoes r cooked.
  • Serve hot.
