I can proudly say that this is one of the simplest and flawless recipes i had ever tried.I'm sure its definitely a crowd pleaser......

- BASMATI RICE(LONG GRAIN RICE)-300 GM
- ONION-2 (FINELY CHOPPED)
- CAPSICUM-1(FINELY CHOPPED)
- PANEER(COTTAGE CHEESE)-200GM
- MUSHROOM-200GM(SLICED)
- SALT-TO TASTE
- CRUSHED BLACK PEPPER-HALF TSP
- GREEN CHILLI-1(SLIT)
- CHINESE SALT(AJINOMOTO)-HALF TSP
- OIL-TO SEASON
- GINGER-HALF INCH
- GARLIC 6 CLOVES
METHOD
- Boil 5 cups water in a broad vessel.Add the rice and cook in a medium flame.After 10 minutes take a grain of rice and taste it.It should be half cooked.(When you break a grain of rice you should see a white spot in the middle.Drain the water and spread the rice on a plate to cool.
- Meanwhile heat 2 tbsp of oil in a broad vessel.Add mushrooms and cook on a high flame.When they turn brown ,sprinkle 2 tbsp of water .(You will notice the mushrooms losing water at this stage).Keep frying till the water evaporates.Remove from fire and keep separately.
- In the same vessel heat 2tbsp of oil.Add chopped onion and fry on a medium flame till transparent.
- Grind together ginger and garlic and add this to the onions.
- Cook till the moisture is absorbed.
- Add the fried mushrooms,fresh capsicum and cook for 2 minutes.
- Add chopped paneer and fry for another 2 minutes.
- Add salt at this stage,ajinomoto and pepper and stir well.
- Remove from fire and keep aside.
- Take a large bowl.First add one laddleful of rice and then one laddleful of vegetable mixture.Mix well and repeat the same process.This ensures even mixing of rice and the vegetable mixture
- Now transfer the prepared fried rice in a deep dish and cook on a medium flame with lid on for 10 minutes so that the flavors gets incorporated int the rice.
- Serve hot with any chinese side dish/tomato ketchup.
HANDY TIPS
- Its important not to overcook the rice as they tend to break while mixing.
- Any seasonable vegetables like cabbage,cauliflower can also be added.
- Chinese sauces like soya sauce and workshire sauce can be added for an enhanced flavor. (one-fourth tsp each)
- The same method can be followed for making chinese noodles.Use cooked plain noodles and follow the recipe.
