CHOCOLATE MUFFINS

Can anyone dislike chocolate?I'm sure the answer is no.A perfect beginning for a sunshine day...


INGREDIENTS

  • UNSALTED BUTTER-100GM
  • CASTER SUGAR(SUPER FINE SUGAR)-125 GM
  • DEMERERA SUGAR(AVAILABLE IN SUPERMARKETS)-100GM POWDERED
  • EGGS-2
  • FRESH CREAM-150ML
  • MILK-5TBSP
  • PLAIN FLOUR(MAIDA)-250GM
  • BAKING SODA-1TSP
  • COCOA POWDER(I USED CADBURY'S)-2TBSP
  • CHOCOLATE CHIPS (AVAILABLE IN SUPERMARKETS) -200GM
METHOD

  • Preheat the oven to 200 degree Celsius .Place 12 muffin paper cups in the muffin tray.
  • Put the butter,caster sugar and demerera sugar into a bowl and beat well.
  • Beat in the eggs,cream and milk until thoroughly mixed.
  • Sift the flour,baking soda and cocoa powder into a seperate bowl and stir into the mixure.Add the chocolate chips and mix well.
  • Spoon the mixture into the 12 paper cups.
  • Bake  them for 30 minutes or until  a toothpick  inserted comes out clean.
  • Remove from oven and allow to cool for 10 mins.
  • Serve immedietly.
HANDY TIPS


  • Toss the chocolate chips in little flour before adding to the mixture.This avoids the chocolate chips from setttling in the bottom.
  • Fill the paper cups upto half since they tend to rise up.
  • The battter should be quite thick to get soft muffins.
